 1.75 lbs Thin Chicken (Tyson, trimmed & ready)
 2 Jalapeños, sliced
Set up your breading station with
 1 cup Whole wheat breadcrumbs
 1 tsp taco seasoning
 2 tbsp All purpose flour
 ½ tsp Salt
 ¼ tsp pepper
 1 Egg
 1 tbsp skim milk
In a bowl beat:
 4 oz Reduced fat cream cheese (should be room temp)
 5 oz Reduced fat cheddar cheese
 3 Cloved garlic, minced
 ½ tsp Salt
 ½ tsp Cumin
 ½ tsp Coriander powder
 ½ tsp Smoked Paprika
 ¼ tsp Black pepper

Pre-heat Oven to 400 degrees and prepare a non-stick baking pan with cooking spray.

Set up your breading station

Beat all the ingredients in the cheese mixture until well combined

Flour both sides of a piece of chicken

Place a small scoop of the cheese mixture in the middle of the floured chicken & place a few strips of the jalapeno pepper on top of the cheese mixture.

Roll the chicken like a burrito and place in the egg wash and then in the breadcrumb mixture.

Place on baking sheet….repeat with all chicken

Bake for 25 minutes.

Serve with Ranch Dip & Garnish with Cilantro.
