Masala Omelet

 ¼ Finely Diced Onion
 1 Small Tomatoes
 ½ cup Chopped Baby Spinach
 3 Thai Spicy Green Chilis, chopped
 Chopped Cilantro
 2 Eggs
 ½ cup Egg Whites
 1 tsp Ground Tumeric
 1 tbsp Garam Masala
 1 tbsp Shredded Cheese

Sautéed onions, tomatoes & green chilis in EVOO spray. Once onions are translucent add the spinach, seasonings & cilantro.
Whisk eggs together and add to pan , turn the flame down to low and cover pan. Check in about 5 min & add cheese then flip omelet, cook a few minutes until done.
