I try to make a breakfast pie or Quiche on Sundays, this way I have a grab & go healthy breakfast waiting for me to take to work on Monday.  This breakfast pie is a healthier Quiche since I use hash brown potatoes as a crust.  I picked up that idea up from a cousin that is a registered dietician. This 140 calorie & low points breakfast is an easy go to while doing weight watchers or if you are trying to get your waistline ready for the summer.   Enjoy!

 1.50 cups Simply Potatoes; hash browns style (unflavored)
 2 Romana Tomatoes, diced
 1 cup Baby spinach, chopped
 1 tbsp whole milk
 6 Large eggs
 ¼ cup Goat cheese crumbles (I use Trader Joe's)
 ½ tsp salt
 ¼ tsp black pepper
 Extra Virgin Olive Oil Non-Stick Spray
 Glass Pie Pan

Pre-heat your oven to 450 degrees. Spray the pie pan with EVOO spray.

Pack the potatoes into the bottom and sides of the pie pan; like if you were packing a pie crust.

Spray the top of the potatoes with EVOO spray and place in oven for 15 minutes; until slightly brown and crispy. Once you remove the potatoes; lower oven to 350 degrees.

In a med sized mixing bowl add the 6 eggs, salt, pepper and whisk in the milk.

Add the tomatoes and spinach, mix until combined

pour egg mixture into the pie pan with the the browned potatoes.

Sprinkle the goat cheese on top.

Place into oven and bake for 30 minutes; until middle of egg pie is set.

Let rest for 5 minutes and then cut & serve. Enjoy!!
