This mango mousse cheesecake trades the dense, baked texture of a classic New York style cheesecake for something lighter and silkier. A crushed pistachio Parle-G crust adds a nutty, slightly sweet base, while a feathered mango swirl and a scatter of rose petals give it a finish that looks far more complicated than it actually is.
No oven required. Just a springform pan, a mixing bowl, and a little patience while it chills.

Ingredients
- 16 oz (2 blocks) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1¼ cups thick mango puree (Ataulfo/Alphonso mangoes work best)
- 2 cups heavy whipping cream, cold
- 1 tbsp lemon juice
- 1 packet (2¼ tsp) unflavored gelatin + 3 tbsp cold water (optional but recommended for clean slices)
Directions
- Beat the cream cheese until completely smooth.
- Add powdered sugar and vanilla; beat again.
- Mix in the mango puree and lemon juice.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the mango mixture.
- If using gelatin, bloom it in cold water for 5 minutes, microwave for about 10 seconds until dissolved, let cool slightly, then whisk into the filling.
- Pour over the chilled crust and smooth the top.
- Refrigerate for at least 6 hours, preferably overnight.
Mango Swirl and Garnish

- 2 to 3 tbsp mango puree
Pipe or spoon small dollops over the top and drag a skewer or toothpick through to create the feathered swirl pattern.
