The way to my husband’s heart is definitely through his stomach…..and this steak is probably one of his all time favorites. A great cut of Skirt Steak is needed for this recipe. I usually purchase this from Whole Foods and they trim it so there is barely any fat on the strip. I serve this up with Cilantro Lime Rice, Black Beans, Sweet Plantains and a side of Chimichurri sauce. Leftovers of the steak were moist & I ate it as a steak sandwich at work the next day.

Ingredients
2 lb Skirt Steak; trimmed of all visible fat
5 Tbsp Chobani 0% plain greek yogurt
2 Tbsp Argentinian mix chimichurri rub (available at Whole Foods)
1 Tbsp Montreal Steak Seasoning
3 Cloves Garlic, minced
Instructions
In a small bowl combine the yogurt, chimichurri rub, steak seasoning & minced garlic
Cut you steaks in 4 oz portions and coat both sides with the the marinade.
Place coated steaks in a large container with lid and marinade in fridge for min 4 hours (I marinate overnight)
Cook steak on indoor grill pan (can use deep saute pan) for approx 4-6 min on each side.
