There is nothing like starting your day with a healthy and filling breakfast. This breakfast sure looks fancy; but is super easy to put together. The spinach, roasted red pepper and Italian cheeses make this a savory breakfast treat. The flavored turkey bacon adds a salt & pepper taste that goes well with the eggs & veggies. It is a rustic & cozy breakfast perfect for a snow day.

8 thick sliced pieces of Turkey Bacon (I used Wellshire Turkey Peppered all natural; uncured)
5 large eggs
1 4oz container of All Whites
1 cup chopped baby spinach
1/2 of a roasted red pepper; chopped (in water; jar)
1/4 cup of reduced fat Italian shredded cheese (Sargento)
1/3 cup of skim milk (I use over the moon)
1/2 tsp of salt
2 tsp Italian seasoning.
Preheat oven to 425 degrees and prepare a muffin pan with butter flavored cooking spray. Pre-cook the bacon in a skillet and set aside (don’t make bacon too crispy,you want it to be flexible). In a medium mixing bowl add all of the ingredients (except for bacon) and combine/wisk together. Place the bacon on the edges of each compartment of the muffin tins (make a circle, surround edges of each individual muffin tin). Fill the muffin tins with 1/4 cup of egg mixture; pour the mixture in the middle of the tin (inside of the bacon circle) Bake for approximately 25 minutes until it is set. Serve immediately. You can refrigerate the leftovers for a quick breakfast on the go…just microwave for 45-60 seconds.
