Ingredients:
1.75lbsThin Chicken (Tyson, trimmed & ready)
2Jalapeños, sliced
Set up your breading station with
1cupWhole wheat breadcrumbs
1tsptaco seasoning
2tbspAll purpose flour
½tspSalt
¼tsppepper
1Egg
1tbspskim milk
In a bowl beat:
4ozReduced fat cream cheese (should be room temp)
5ozReduced fat cheddar cheese
3Cloved garlic, minced
½tspSalt
½tspCumin
½tspCoriander powder
½tspSmoked Paprika
¼tspBlack pepper
Directions:

Pre-heat Oven to 400 degrees and prepare a non-stick baking pan with cooking spray.

Set up your breading station

Beat all the ingredients in the cheese mixture until well combined

Flour both sides of a piece of chicken

Place a small scoop of the cheese mixture in the middle of the floured chicken & place a few strips of the jalapeno pepper on top of the cheese mixture.

Roll the chicken like a burrito and place in the egg wash and then in the breadcrumb mixture.

Place on baking sheet….repeat with all chicken

Bake for 25 minutes.

Serve with Ranch Dip & Garnish with Cilantro.
